Illusion Dry White Wine – 100 cases produced.

Current vintage offering is 2017. Seasonally reliable warm and balanced humidity produced an exceptional dry White Pinot Noir. Early harvesting retained acidity and freshness, followed by light, whole-cluster pneumatic pressing. Yellow citrus, salty minerals, chamomile and yellow apple character. No obvious wood flavor from neutral French oak barrels. Good length, moderate body and alcohol, finishes fresh and beautifully balanced. Drink 2020-2025. Tasting notes Spring 2020 IB.

Illusion + Food = Fly-over the Pacific Ocean…. The bounty of the Pacific Ocean calls when we pull a cork on our Illusion. Local oysters, simply and freshly shucked and served with citrus and a sliver of pickled ginger, razor clams breaded and deep fried with seasoned mayo, or a whole steamed Dungeness crab served with clarified butter and steamed new potatoes. Your choice!
